Tatu is managed under Kofinaf Company Ltd., one of the largest coffee estate groups in Kenya. The land comprises 907 hectares, including about 460 ha under coffee. The estate employs around 80 permanent workers and between 200–1,200 seasonal labourers, depending on the harvest cycle.

Kenya Natural is all about quality. The process begins at the tree: pickers are specially trained to identify and harvest cherries at their optimal ripeness. After harvesting, the cherries go through an additional round of hand-sorting to ensure only red, ripe cherries proceed.

Following fermentation, the coffee is sun-dried on raised beds until it reaches a moisture content of 11%. It is then sent to the mill for colour sorting and final handpicking. A sample is sent to Dormans' quality lab for evaluation and approval. Once approved, the coffee is packed and prepared for export.

קניה – סקירה כללית

בקניה מייצרים בעיקר קפה שטוף באופן מלא (Fully Washed). בעיני רבים, קניה נחשבת ליצרנית הקפה בין הטובות בעולם. יש כאן יותר מ- 700,000 מגדלי קפה (חקלאים קטנים) שמספקים כ- 55% מכלל הייצור. השאר מיוצר בעיקר על ידי חוות גדולות הידועות בשם "אחוזות" (Estates).
כמעט את כל סוגי הקפה שלנו מקניה מגדלים חקלאים קטנים, כל אחד עם 1-2 דונם קרקע. לחקלאים רבים גידולים שונים וברשותם יכולים להיות רק כ- 100 עצי קפה. החקלאים מאוגדים באגודות שיתופיות הפועלות כארגוני גג של מפעלים (טחנות Wet Mills), לשם החקלאים הקטנים מביאים את דובדבני הקפה שלהם לעיבוד.
